One of the customers have requested for sorting document libraries in a particular order when they choose site contents . Is this possible ? What options do we have ?

A workaround that you can implement is to rename libraries/lists with a prefix on how the users would like the sort order to appear.
01-Library Name
02-Library Name
etc.
