Developing content types has been noted to be “more art than it is science” by Mark D. Anderson, and you can find articles about how many content types should you have/use. Obviously companies and needs differ, but there should be a base number of content types that would work for all companies of all sizes since they should all have content for HR, Finance/Accounting, Marketing, etc and then there would be content based on what they do (retail, education, utilities, etc).

We have a couple search based application that use metadata heavily. One is an intranet solution and the other is a robust document management system/interface, both which use Refiners and term driven pages. We prefer to create a set of base content type that teams can inherit from to manage themselves. When used in heavy search applications, content types are mandatory to provider an “amazon-like” filtering / sorting experience.
