Is it possible to get an audit of all folders and documents in a Sharepoint document library automatically?
You can enable auditing, which does exactly what you want for that library. After it’s enabled you can generate reports under Site Settings -> Site Collection Administration -> Audit log reports.
You may also get help from SharePoint auditing tool: https://www.lepide.com/lepideauditor/sharepoint-auditing.html
I don’t have permissions to use a tool like Sharegate. For now I need an audit of the content, so a tool like Sharegate can be proposed. I’m going to assume there’s no easy way to audit the content.
Ah okay. Not out of the box. You would have to build something to do this or use Sharegate for your Audits.
You can turn on audits for Documents and Items, Libraries and Sites here.

This is an actions log… I’m looking for a content audit, so a list of all documents and folders as they appear in the library. Basically a map of the contents on the Sharepoint site.
Ah. And you want to see it across your entire site collection? Or just one library? If just one library, why not just a view?
The entire site collection – several folders and hundreds of documents. Not achievable with a view. The content is being migrated, so a complete view is required.
Are you doing this migration manually? Or do you plan on using a Tool such as Sharegate?
Correct. However OP would like an entire audit for the entire site collection.
