We used to be able to print the SharePoint List item form – now that is not available at all in SharePoint Online.
Does anyone have a solution for how to take the data in one row of a list item and print it to a document?

There’s no out of box option to print an item. Are you printing the item display form as is or you want a specific format in which you need to print
If specific format & when you said you had the option in your on-premise SharePoint, it might be a custom component built. You need to build something similar for online using Sharepoint Framework Extensions.
In that case you can use the default print option that would print your entire screen.
