Well, it looks like we have managed to secure a SP Enterprise Online plan for the entire company. Id like to have gone hosted but I dont hold the purse strings!
I was just wondering if someone can point me in the right direction to a diagram that depicts and shows the steps involved for the relationship between on premise AD (2003) and SharePoint Online (2013).
Any pointers, issues or recommendation would be appreciated!
What are the options if you wanted to say sync an on premise ad account with say an account in SQL (using forms auth) ? Is it custom all the way ?

It depends what you exactly want.
You can do a simple Dirsync, that syncs users with a hash password.
An other option is to use ADFS (federation) to authenticate to your onpremise AD. For that you need 2003R2:

I assume you want to know how users can log in to Office 365 with their AD credentials. The best place to start is TechNet: http://technet.microsoft.com/en-us/library/jj573653.aspx
What you first do is to configure Directory Synchronisation (sync AD accounts with Office 365, if desired also password hashes), and if you want true Single Sign On then you configure ADFS as well
