I was wondering if anyone knew how to create a Workflow Approval Task on PDF document?

Most of the time, the out-of-the-box Approval Workflow should work. Just make sure you have the following prerequisites:
- Activate Workflows under Site Collection features
- Under Library Settings,Â
Click Workflow Settings and select Add a workflow link.Â

How would I do the workflow in sharepoint designer 2010
If you want a simple approval, you could go to document library settings -> Workflow settings -> Add Workflow & create a new ‘Approval Workflow’. You can fill out the required details in the form and you are set to go.Â
If you want to have more advanced conditions and validations, you may need to go for a SharePoint designer based workflow.
