I was wondering if anyone knew how to create a Workflow Approval Task on PDF document?

If you want a simple approval, you could go to document library settings -> Workflow settings -> Add Workflow & create a new ‘Approval Workflow’. You can fill out the required details in the form and you are set to go.
If you want to have more advanced conditions and validations, you may need to go for a SharePoint designer based workflow.
