I was wondering if anyone knew how to create a Workflow Approval Task on PDF document?

Hi, @welcome35,
Most of the time, the out-of-the-box Approval Workflow should work. Just make sure you have the following prerequisites:
- Activate Workflows under Site Collection features
- Under Library Settings,
Click Workflow Settings and select Add a workflow link.
