I am designing an approval workflow. After the workflow is approved, the list is sent to a representative to assign a number to that list. What action can I use to only allow this person to edit this column?

I would cheat. Have them actually approve a list item that is in a different list, same site(this list item is created via workflow). Just give them a field to assign the number. Use a workflow to write that number back to the master list.
