For classic sharepoint pages you’ll want to use a custom action and inject google analytics. http://sharepoint.handsontek.net/2017/02/26/how-to-add-google-analytics-to-sharepoint-without-modifying-the-master-page/
If you are using modern, you’ll want to build an SPFx Application Customizer that injects the script into your modern pages. https://docs.microsoft.com/en-us/sharepoint/dev/spfx/extensions/get-started/using-page-placeholder-with-extensions

This is for Sharepoint on premise not online , i have the same question , any ideas ?
