I’m really struggling with the basics – what seems should be intuitive. I am having a problem getting my Document Content Types to show in the +New option of the library. Before I allow use of content types the ‘New’ option allows me to choose the various Office apps and the Folder option. After I allow content types the New button seems to open the upload dialog. Has anyone else experienced this? I’m using the Cloud variety (Online 1)

Ian, I believe this is normal behavior, I just tested on my SP2013 farm and I experienced the same thing. Normally you would create a new content type (CT), i.e. a Word document (not a template as MS defines templates) template, and an Excel “template” for something. Then you might add the new CTs and maybe delete the Document CT. Then those two options would be available under the New pull down.
I think you can change what + new document does, but I would be wary of changing behavior.
