One of the customers have requested for sorting document libraries in a particular order when they choose site contents . Is this possible ? What options do we have ?

Anything is possible. However, there is no way out of the box to do this. And the only real way to do this would be extremely hacky using JavaScript.
If they would like to find libraries by a different order, maybe just don’t use Site Contents and instead create a page that lists the links to the lists in the specific order.
