I think it would be great to have special SPChats from time-to-time using something like Google Hangout. Hangout has plugins to share a variety of different things (not just your face!) I think the simplicity of SPChat being text-only is great, but there are times where I would like to be shown slides, code, etc. Using Google Hangout has a few additional benefits because you can auto-save your broadcast to YouTube. You can also save it locally for processing into something such as a podcast.
If this format became popular enough with the community, perhaps a regular SharePoint Community show/podcast could be created to discuss things going on in the community. Might provide a great way to recap events, share particularly good solutions to problems, etc.
