We have a MOSS 2007 Farm made up of 3 servers (2 Web Front End’s and 1 Application server) currently running on Windows Server 2003 R2 x64. We are planning to upgrade MOSS 2007 farm running on Windows Server 2008 R2 OS. i.e. Just wanted OS upgraded and using the same hardware.
Any advice or links to resources would be appreciated.

As you already mentioned you have to use the same servers then I would advise you to detach one WFE from the farm and then upgrade its OS to 2008 R2 along with MOSS, perform a full backup of the farm and restore in the newly created WFE along with customization. Once you are done with it just upgrade other machines and attached to the same WFE created earlier. Divide services of WFEs and App server.
